Easter weekend is an eventful weekend for most. Unfortunately, for Karen the eventful weekend led to an accident, causing severe injury. The injury was followed with a grueling four weeks of round the clock in-patient care. Thankfully, the time has come to transition back HOME and begin the next phase of healing. You may be thinking, What can I do to help? How can I make this easier? Often, the initial thought is visiting. The thought is greatly appreciated, though in these early weeks the most help will be nourishment. This page is setup to offer organization & coordination for those wanting to help provide home cooked (gluten-free) meals, gift-cards or donations.
Special Notes
If you would like to make a meal, please ensure it is gluten-free. For further insight, most meals they consume are HIGH in protein and LOW in carbs, sugars and highly processed ingredients. Think meat and veggies! Good meat ideas include red meat, poultry and light & mild fish. A wide variety of veggies are enjoyed, including Broccoli, cauliflower, bell peppers (red is best), Brussel sprouts, zucchini, cabbage, asparagus, green beans, kale salad, cucumbers, and mushrooms. Their favorite fruits are cantaloupe, blueberries, raspberries and farmers market strawberries. They steer AWAY from breads, pastas, beans and sweets. Their grocery store of choice is Kroger. Two of their favorite local spots are Dean’s and El Jinete.
