If you know Rachel Gordon, then you know she is the person who shows up. She shows up for friends, for family, for neighbors, and for complete strangers in need. She gives her time, her energy, her heart, and never asks for anything in return. Rachel is the kind of person who quietly carries everyone else’s burdens while asking for nothing herself. One of the things that amazes me most about Rachel is that, despite having a deep fear of needles, she has still been one of the first people willing to help my husband through dialysis. That is who she is — courageous, compassionate, and endlessly selfless. Over the last seven weeks, Rachel has experienced three seizures and is now on a difficult medical journey trying to find answers. Even while navigating exhaustion, uncertainty, and appointments, she continues to think of everyone else before herself. Right now, one of the hardest parts of her day comes in the evenings, when the weight of everything catches up with her and even thinking about planning or preparing meals feels overwhelming. This meal train is a small way for all of us to love Rachel the way she has loved so many of us for years. A few helpful meal notes for Rachel: Rachel has several food allergies and sensitivities, including wheat/gluten, oats, soy, eggs, dairy, cucumber, peaches, and walnuts. Please don’t let that intimidate you though! There are four people in the household eating, and everyone else can enjoy regular meals and sides. Even if only part of the meal is something Rachel can safely eat — such as plain meat, a simple salad, roasted vegetables, rice, or a small allergy-friendly portion — that is incredibly appreciated.
