Story
Over the past couple of weeks, my family has been under a great deal of stress as we prepared for and supported my mom through her open-heart surgery. Thankfully, she is now recovering at home, and we’re doing everything we can to make her healing process as smooth as possible. As a gift to my parents, I’m organizing a meal train to help ease their load while my mom recovers. She will be starting physical therapy and will have a nurse visiting daily over the next three weeks. Since my dad and my sister will be working during this time, having dinners taken care of would be a huge help. Think of it as instead of sending flowers or a fruit basket, send a meal instead! If you’re able to sign up, we would be so grateful. My mom is on a low-sodium diet and cannot eat red meat, so we kindly ask that meals follow those guidelines. Even if you’re unable to contribute a meal, please know that your thoughts, prayers, and support mean the world to us. • Low Sodium: Please keep meals to 2 grams (2,000 mg) of sodium or less per day. • Low Sugar & Lower Fat: Choose options that are low in added sugar and lower in fat. • Red Meat: Allowed only once a week, and must be lean (15% fat or less). • Cooking Methods: Please use grilling, baking, broiling, roasting, or stewing. No fried or pan-fried foods, please. • Dairy: Use fat-free or 1% low-fat milk. • Eggs: Egg whites only—no yolks. • Carbohydrates: Meals should include 3–5 servings of carbs per meal (about 45–75g). • Sweets: Avoid sugary desserts and sweet treats. • Poultry: Please remove the skin from any chicken or turkey.
