Andrew and Ashlee are spending nearly all of their days traveling back and forth to Huntsville to be with their precious daughter, Scottie Ann, who is currently in the NICU after being born premature at 34 weeks. As any NICU parent knows, the days are long, the routines are unpredictable, and most of their energy is focused on being present with their baby girl. With so much time spent on the road and at the hospital, preparing meals is one of the last things they have the time—or energy—to think about.
