Our dear friend Erin is a remarkable woman—she’s a single mom of three beautiful children, a full-time worker, and now, a warrior facing one of the toughest battles of her life. Erin was recently diagnosed with stage 3 triple positive breast cancer and is currently undergoing intensive chemotherapy treatments. As you can imagine, chemotherapy has taken a tremendous toll on her body. The fatigue and nausea are often so overwhelming that getting out of bed becomes a struggle. Yet, through it all, Erin continues to show up for her children and her job—because that’s who she is. Strong. Devoted. Unstoppable. But even the strongest among us need help sometimes. That’s where we come in. We’re organizing this Meal Train to help lighten the load during this incredibly difficult time. Providing Erin and her kids with nourishing, ready-to-eat meals will allow her to rest and recover without the added stress of cooking or meal planning.
