Our dear friends, Katie and Carlos, are facing the kind of news no parent should ever have to hear. Their sweet, silly 2½-year-old Jacob, who was just his usual energetic self weeks ago, has been diagnosed with rhabdomyosarcoma, a rare and aggressive cancer. What started as what we all thought were simple ear infections quickly turned into a parent's worst nightmare. After a whirlwind of ER visits and scans, a tumor was found pressing against Jacob’s ear and optic nerve. This week, starts the long, difficult road of treatment. Why We’re Starting This Food Train Katie and Carlos are two of the most hardworking, amazing parents and friends you’ll ever meet. They are people of incredibly strong faith, and while that faith is sustaining them, the logistical reality is overwhelming. Between hospital stays with Jacob and keeping life steady for 5-year-old Joey and 4-month-old baby Alessandra, there is no time left for grocery shopping or cooking.
