Hoʻōla "Healing" CHEF HIDE

Aloha Kākou, On April 28, Our Legendary Wild Thyme Chef Hide was diagnosed with STAGE 5 CHRONIC KIDNEY DISEASE ESRD. He was hospitalized for 11 days but has been home since May 2nd. He is currently waiting to start Peritoneal Dialysis which is an at-home treatment until he receives a donor for a transplant. At age 52, this island boy originally from Japan, began his culinary journey on the island of Guam and later found himself landing at his new home here in San Diego at The Wild Thyme Company. If you've had the pleasure of his stunning talent, mentorship, and endearing charisma, you naturally feel star struck just being around him. Hide no longer has any living parents, but 1 sister who lives in Japan. As he begins this new journey here, support on different levels would be forever appreciated. His Ohana at The Wild Thyme Company has been helping him navigate through the healthcare system as you may imagine how overwhelming this could be for anyone. On Saturday May 9, he has his initial appointment with his Primary Doctor to establish his baseline of care for his condition. On Friday, May 15, he has an appointment with the Nephrologist to then establish the process of his dialysis. Until then, we don't have much more information on his next steps so for now, we are helping him take it one day at a time. We will use this platform to update you regarding his treatments and progress along with how you could support him during this adventure. Due to the nature of this disease, every ingredient he consumes is crucial to his health so instead of providing a meal train, we will provide a list of approved grocery items that will continue to ignite his creativity and passion for food. Afterall, it already is intimidating to cook for an amazing Chef. Ha! :) Thank you everyone for joining Hide on this Adventure! As his Ohana, we will lean on each other to build a wall of mana for one of our own to find his safe place, his hope, his strength, his laughter and good vibes!
