Most of you know Lindsay as someone who shows up — and right now, she needs her village to show up for her. Lindsay has been diagnosed with autoimmune encephalitis and autoimmune autonomic ganglionopathy — two serious conditions that have significantly impacted her health and daily life. Over the next year, she'll undergo 14 rounds of immunotherapy (similar to chemotherapy) along with ongoing palliative care. It's a long road, and in the meantime, she's unable to work. Lindsay, her husband Eric, and their daughter Wynne need some extra hands with the everyday things — meals, laundry, house cleaning, walks for the dogs, and outings for Wynne. Weekends and Wednesdays are especially helpful days to step in, as Eric's work keeps him busy on Saturdays and Sundays. Last year, when we lost our home in the Eaton Fire, Lindsay and her family were there for us without hesitation. This is our chance to return that love. Lindsay is following an Autoimmune Protocol (AIP) diet, which is very specific since she is having a hard time eating. Helpful meal ideas: ● Soups, stews, and broths ● Meals made with simple, whole ingredients ● Freezer-friendly portions (individual or small containers are ideal) Please avoid (AIP restrictions): ● Dairy ● Grains ● Legumes ● Nightshades (tomatoes, peppers, eggplant, potatoes) ● Processed foods, seed oils, and refined sugars When in doubt, simple is best—clean bone broths, slow-cooked meats, and vegetables that freeze well.
