In early May, Bob (my dad) had a serious fall that left him with significant injuries requiring ICU care and a stay in a skilled nursing facility. He's now home, but still needs around-the-clock care. Sally (my mom) has been his devoted caretaker and, while she's given everything she has, the physical demands are starting to take a toll. My brother, husband and I are helping out with house chores, errands, etc as best we can. At this time, they could use additional help with meals and groceries and my mom has finally given me the green light to reach out — so here I am, asking for support for both of them. It is unclear how long full recovery will take, but we are hopeful that within a few weeks Bob will regain more independence. He is certainly looking forward to it!
My folks enjoy the following foods: -Pasta dishes---spaghetti, fettuccini alfredo (fettuccini alfredo with chicken is my mom's favorite dish) -Potato dishes -Mexican casserole -Basic salads with lettuce, cucumbers, onions, tomatoes -Chicken and rice soup -Potato soup *Strawberries, strawberry pie/cake, and chocolate chip cookies are some of Bob's favorite sweet treats :) Staples they can use for quick and easy meal prep: -Rice, rotisserie or oven roasted chicken breasts, chicken broth, everything bagels and veggie cream cheese, english muffins, mini croissants Please avoid: dark chicken meat, mushrooms, fish, spicy foods, cooked spinach and more than we could remember at this time (if in doubt about ingredients, please reach out directly to Sally)
