We are all so excited to give a big, warm welcome to Sabine Hana Satsuki Simon and to help ease Denise and Matt's transition into parenthood. We've put together a meal train calendar to help keep them fed. As soon as Baby Girl arrives we'll open up the calendar so don't be shy and select a day to drop off some tasty eats. *Because the family lives in relatively remote Lockhart, a digital Visa Gift Card for them to buy groceries or takeout is of course welcome! You can select that option below when you choose a date to help with* Please use the notes below to guide and inspire you in preparing nutritious and tasty meals for them. There are a few dietary restrictions to observe as well as some preferences that have been chosen to help keep the family going strong! (check out a few recipes below for inspiration or shoot, just go ahead and make one of them!) Quinoa, Lentils, & Greens Soup 3/4 cup roughly chopped yellow or white onion 3 tbsp olive or coconut oil sea salt 2 quarts broth 2 tbsp cumin 4 carrots, peeled and cut into small cubes 2 cups green lentils 1.5 cups quinoa 3 cups roughly chopped kale 1 tbsp soy sauce/tamari/aminos Saute the onions with a pinch of salt and then add the broth, cumin, carrots, lentils and bring to a boil. Reduce to to medium-low heat for 30-40 minutes or until carrots and lentils soften. Add the quinoa and kale, reduce heat to simmer for 15 minutes. Remove from heat, season with soy sauce. Hearty Sausage Stew 1/4 cup coconut, avocado, lard, or butter sea salt 1/2 of a white or yellow onion roughly chopped 6 medium, fresh tomatoes quartered with seeds left in 6 small red potatoes, about 4 cups, cubed 2 cups quartered mushrooms 2 quarts broth 3-5 tbsp tomato paste 4 cloves garlic 4 sausages cut into 2" sections 1 cup Israeli couscous 6-8 cups of greens, kale/swiss chard/spinach fresh ground black pepper Warm the oil in a large pot, when it's hot add the onions and cook until slightly browned. Add the tomatoes and potatoes. About 3 minutes later add the mushrooms and cook for about 10 minutes. Add the broth, tomato paste, and garlic and cook for 1.5 hours on low heat. With 15-20 minutes remaining add the sausage and couscous. In the last few minutes add the greens to the top and cover until wilted.
